The Local 43 "High Voltage Wire Dinner!"  😊


After a long day of pullin’ cable, grounding wires and helpin’ light up the world, you gotta light up those taste buds. This is a strong, hearty dinner for all those hard working electrical workers keepin’ the lights on every day. We wanna pay respect to their craft, the danger they see every day, and the great mix of different humans that make their union so strong. To do all that, we start this meat sauce with a great base of chorizo - a little bit of spice (just like the jokes on a job site) and a whole lot of flavor. We use some great herbs and layers here, like fresh rosemary and dried thyme to bring out the best of the sausage. Then we use a little chicken stock and some beer to build the sauce. After building something all day, sometimes a little beer can go a long way, right? Now, we use a splash of cream to bring this all together, like a great union hall does. The voltage gets amped up because of the rich, complex flavors that work well together, and we use some spaghetti nests that become our wire coils. You need a little starch to refuel after a long day and prep for the next one too. Imagine the perfect work boots on a long day - this dinner tastes like that feels. Let’s feed the women and men who are helping power up this community. They do a lot for us, so makin’ them a great dinner is the least we can do.

  • 4 nests of dried fettuccini, angel hair or spaghetti
  • Healthy splash of olive oil
  • 1 lb ground raw chorizo (or uncooked chorizo cut out of the skin and chopped up)
  • 1 small white onion, finely diced
  • 3 crushed garlic cloves
  • ¼ C roasted red pepper, chopped up
  • 1 Tbsp tomato paste
  • 1 (15-oz) can of crushed tomatoes
  • 1 bay leaf
  • 1/2 tsp chopped fresh thyme
  • 1 tsp chopped fresh basil

  1. In a large stockpot, heat the olive oil over medium heat
  2. Add the chorizo, constantly stirring and chopping it until browned (crispy is ok)
  3. Remove the meat, leave the grease in the pan
  4. Throw in the onions and cook for 4–5 minutes
  5. Add in the garlic and red peppers and cook for another minute until really fragrant
  6. Put in the tomato paste, and cook until it’s toasted, a couple of minutes
  7. Add in the can of tomatoes, the stock, the beer, thyme, paprika, rosemary, salt/pepper
  8. Lower the heat and simmer for 30 minutes
  9. Cook the spaghetti nests according to the directions on the package, drain
  10. Plate one cooked nest (this is your wire coil)
  11. When there’s about 5 minutes left, add a tiny splash of cream and stir until evenly mixed
  12. Generously drape the sauce all over the wire coil
  13. Throw a heap of the shredded romano cheese on top
  14. Garnish with fresh cilantro
  15. Grab a fork and pull some wire


  16. Bonus Tip: This sauce is great the next day, perfect to use on a garbage plate if you’re looking to kick up the flavor and the voltage. It’s also great to mix into a standard ol’ mac and cheese (or a store bought one) to bring something different to the job site.
